Ingredients:

1 x 85g can Plumrose Chicken Deli’sh Cajun

1 small avocado, diced

1 cup baby cos leaves, washed and torn

1 small Lebanese (salad) cucumber, peeled and diced

1 lime

1/4 cup fresh coriander leaves

 

Method:

Flake the Plumrose Chicken Deli’sh Cajun into a large salad bowl, and add avocado, cos and cucumber. Toss well, then squeeze over lime juice and add coriander leaves. Gently mix again, and serve on one large or two small plates with cracked pepper. Great with crunchy bread or crackers.

SERVES: Serves 1 as a main meal or 2 as a light lunch

TIP: Assemble the salad (avocado, cos, cucumber, coriander and lime juice) from home, then add the Plumrose Chicken Deli’sh Cajun when at work.
