Christmas Turkey with Ham Stuffing:

Ingredients:

5kg whole Turkey, cleaned and dried
4 cups fresh white breadcrumbs
340g can Plumrose Leg Ham, cut into 2cm dice
6 spring onions, chopped
1 egg, lightly beaten
2 teaspoons finely grated lemon rind
2 tablespoons oil
Melted butter for brushing
1/2 cup liquid chicken stock

Method

In a medium bowl, combine white breadcrumbs, diced Plumrose Ham, spring onions, beaten egg, grated lemon rind and oil, mix well. Gently ease your fingers (or a dessert spoon turned upside down) between the breast meat and the skin. Fill this area with half the stuffing and secure neck cavity of turkey with a skewer.

Spoon remaining stuffing into cavity. Seal the cavity with a skewer and tie the legs together with string. Turn wings back under breast and place turkey into a well greased baking pan.

Brush turkey with melted butter and pour 1/2 cup chicken stock into the pan. Cover with foil and bake in a preheated oven at 180°C for 2 hours.

After 2 hours cooking time remove turkey from the oven, discard foil and spoon pan juices over turkey. Return turkey to oven and cook a further 30-40 minutes or until the juices in the turkey leg run clear with no signs of pink when pierced with a knife.

TIP: Add chopped fresh thyme to breadcrumb stuffing.
