Festive Season Fried Rice:

Ingredients:

8 wonton wrappers
½ cup Plumrose Leg Ham, diced
1 tablespoon butter
1 cup long grain rice, cooked & cooled
1 cup frozen Peas, Corn & Capsicum
½ cup cooked chicken or turkey
1 egg, beaten
1 tablespoon soy sauce

Method:

Cut wonton wrappers in half diagonally, lightly spray both sides with oil. Cook on an inverted patty pan tray or small muffin tray in a preheated oven at 200ºC for 3-4 minutes or until golden brown. Remove to a wire rack to cool.

Cook Plumrose Leg Ham in half the butter in a wok or frying pan for 1-2 minutes. Remove from wok. Melt remaining butter in the wok, add cooked rice and stir-fry for 2 minutes. Add the frozen Peas, Corn & Capsicum, chicken and ham; cook for 2 minutes. Push rice to one side, pour in beaten egg and cook for 1 minute, stirring until scrambled. Stir cooked egg and soy sauce through the rice. Serve immediately with wonton scoops

PREPARATION TIME: 20 minutes

COOKING TIME: 15 minutes

TIP: For fried rice it is always best to cook the rice in advance and refrigerate before using.

Chopped celery or spring onions can be added to the rice.
