Ham and Tomato Fettuccine:

375g fettuccine
1 tablespoon oil
200g can Plumrose Deli Ham diced
250g tub cherry tomatoes, halved
4 cups (100g) baby spinach leaves
Shaved Parmesan cheese, for garnish

 

Method:

Cook fettuccine following packet directions. In a frying pan heat oil add Plumrose Deli Ham and cook for 1-2 minutes, add cherry tomatoes and spinach and cook for 2 minutes or until heated through.

Drain pasta, return to the hot saucepan, add ham mixture tossing to combine. Season with salt and pepper and serve garnished with Parmesan cheese.

Serves: 4

Tip: Torn fresh basil leaves add an extra flavour boost for this light summer pasta dish.
