Ham Schnitzel with Tropical Salsa:
Ingredients:
340g can Plumrose Leg Ham, cut into 8 slices
1 tablespoon seasoned flour
1 egg, beaten
½ cup dry breadcrumbs
Oil for shallow frying
Salsa:
1 small mango, peeled and diced
225g can pineapple pieces, drained and chopped
1 tablespoon finely chopped glace ginger
1 tablespoon finely chopped mint
Method:
Coat Plumrose Leg Ham slices lightly with seasoned flour, dip into beaten egg and coat with breadcrumbs Refrigerate until required. Pour oil to a 1cm depth into a frying pan and heat. Add ham schnitzels and cook for 2-3 minutes on each side or until golden brown. In a medium bowl combine salsa ingredients and serve with ham schnitzels.

Cooking Time: 5 minutes
Tip: Uncoated ham slices can be cooked on a BBQ and enjoyed served with salad or in a burger roll.
