Mini Chicken Rolls:
Ingredients:
4 skinless chicken breast fillets
200g chicken mince
200g can Plumrose Leg Ham, diced
2 tablespoons whole cranberry sauce
2 tablespoons pistachio nuts
1 tablespoon chopped fresh parsley
Oil for brushing
Cranberry sauce for serving
Method:
Place each chicken breast between two sheets plastic wrap and using a meat mallet or rolling pin; flatten each breast to half its thickness. In a medium bowl combine chicken mince, diced Plumrose Leg Ham, whole cranberry sauce, pistachio nuts and parsley. Spoon equal amounts of filling down the centre of each chicken breast. Roll each chicken breast up and secure seam with toothpicks.
Place into a greased baking dish seam side down, brush with a little oil and bake in a preheated oven at 200ÂșC for 40 - 45 minutes. To serve, brush chicken with pan juices and serve with cranberry sauce.

TIP: Pinenuts or chopped hazelnuts can be used as an alternative to Pistachio nuts.
