Tomato, Chicken and Basil Pasta:
Ingredients:
1 large ripe tomato, diced
1 clove garlic, crushed
1/2 cup finely chopped fresh basil leaves
1 x 85g can Plumrose Chicken Deli’sh Mayo
2 fresh lasagne sheets, sliced into thick strips
Method:
Combine the tomato, garlic and basil leaves into a large bowl. Place the Plumrose Chicken Deli'sh Mayo and mix through. Bring a pot of salted water to the boil, and add in the fresh pasta strips. Cook for 5 – 6 minutes, drain well (do not rinse) and toss straight into tomato mixture (the heat from the pasta will warm the other ingredients).
Serve immediately with fresh grated Parmesan cheese, cracked black pepper and a side of crusty fresh bread.
SERVES: Serves 1 as a main meal or 2 as a light lunch

Wine / Beer Match: Cabernet Sauvignon or Merlot
TIP: Plumrose Chicken Deli’sh Pesto- Pinenut works well in this recipe too. Replace the Olive-Sea Salt flavour with Pesto- Pinenut, and replace the fresh basil with 1/2 cup chopped black olives.
