Tomato and Ham Pasta:
Ingredients:
340g can Plumrose Leg Ham
3 cups penne pasta
1 tablespoon oil
1 small onion, cut in wedges
1 baby zucchini, diced
½ green capsicum, diced
400g can diced tomato
2 tablespoons fresh basil leaves
Method:
Cut Plumrose Leg Ham into 2cm dice and set aside. Cook pasta in boiling water until tender.
Heat oil in a medium saucepan, add onion, zucchini, capsicum and cook for 3-4 minutes stirring occasionally until tender.
Add diced tomatoes and diced ham and cook for 5 minutes or until heated through.
Drain pasta and and stir through tomato ham mixture, add basil leaves and serve.
SERVES: 4
TIP: This recipe can be served cold as a salad.
