Turkey Breast with Apricot and Pistachio Stuffing:

Ingredients:

1 kg frozen turkey breast, thawed as per instructions
1 tablespoon butter
1 onion, finely chopped
1 cup fresh breadcrumbs
½ cup Pistachio nuts
½ cup dried apricots, chopped
200g can Plumrose Leg Ham cut into small cubes
1 tablespoon marmalade
1 teaspoon finely grated orange rind
Oil for brushing
Cracked black pepper
Skewers for trussing
Cranberry Sauce for serving

Method

Place Turkey breast onto a flat surface, with a sharp knife make a cut horizontally to open out the turkey breast to make a pocket for stuffing. Heat butter in a small saucepan, add onion and cook until soft. Mix cooked onion, fresh breadcrumbs, pistachio nuts, dried apricots, Plumrose Ham, marmalade and grated orange rind. Place ½ the stuffing along the centre of the Turkey Breast, overlap edges and secure with skewers. Brush surface with oil and sprinkle with cracked black pepper. Place into a baking dish and bake in a preheated oven at 180° for 1½ hours. Form remaining stuffing into a log shape and wrap in foil. Place in baking dish for the last 30 minutes of cooking time. To Serve: Cut turkey breast and extra stuffing into slices and serve with cranberry sauce. Delicious served hot or cold.

TIP: Almonds or macadamia nuts may be substituted in this recipe.
