Cheesy Corn Muffins:
Ingredients:
200g can Plumrose Leg Ham
2 cups self raising flour
2 spring onions, chopped
1 ½ cups grated carrot
½ cup grated zucchini
½ cup grated tasty cheese
1 cup milk
2 tablespoons vegetable oil
2 eggs, beaten
Method:
Cut Plumrose Leg Ham into 12 thin slices.
In a large bowl combine self raising flour, spring onions, carrot, zucchini and half the cheese.
In a small bowl lightly beat together milk, vegetable oil, and eggs. Make a well in the centre of the dry ingredients and pour in milk mixture, stirring until just combined.
Spoon muffin mixture into a greased 12 x ½ cup muffin pan. Roll up ham and place into the centre of each muffin. Sprinkle with remaining cheese and bake in a preheated oven at 200ºC for 20 minutes.

TIP: Great for school lunches, make a slit in the top of a muffin and insert lettuce and sliced tomato.
