Fried Rice:
Ingredients:
1 teaspoon oil
2 eggs, lightly beaten
1 tablespoon oil, extra
3 spring onions, finely chopped
½ red capsicum, finely chopped
½ cup frozen peas
1 cup grated carrot
3 cups pre cooked long grain brown or white rice
200g can Plumrose Leg Ham, cut into thin strips
125g can Corn Kernels
1 cup bean sprouts
1 tablespoons soy sauce
Method:
Heat 1 teaspoon oil in a wok or large frying pan, add beaten egg, swirl over base of wok and cook for 1 minute or until set, flip over and cook other side, remove and allow to cool. Roll up tightly and cut into thin slices and set aside for garnish.
Heat remaining oil in a wok, add spring onions, capsicum, peas and carrot and stir fry for 1-2 minutes. Add rice, Plumrose Leg Ham strips and corn and cook until heated through. Stir in bean sprouts and soy sauce.
Serve fried rice garnished with egg strips.

TIP: One cup raw rice, boiled in water makes approximately 3 cups cooked rice.
