1 x 340g can Plumrose premium shoulder ham, diced
1 large onion, sliced
2 tsp cumin seeds (or 1 tsp ground cumin)
2 tsp ground coriander
1 large tomato, diced
1 x 400g can red kidney or borlotti beans, drained
1/4 cup fresh coriander leaves
In a large non stick pan, fry Plumrose premium shoulder ham and onion for 5 minutes adding spice at the last minute until golden and fragrant. Reduce heat and add fresh tomato and kidney beans. Allow to heat through, then toss with coriander leaves.
Delicious served over rice or baked potatoes with a dollop of light sour cream. Add some chilli for a bit of a kick!
