Panfry and Assemble
Place dark rye bread on a wooden board or serving plate. Combine the pesto, mayonnaise and cashews, and spread thickly on the rye bread. Gently panfry ham slices until golden and warmed through. Top 2 slices of bread with ham and rocket, add top slices and serve.
This sandwich is also great with some sliced char grilled capsicum, or served open with some torn basil leaves.
