1 kg baby chat or baby kiffler potatoes, scrubbed and boiled
1 x 340g can Plumrose premium luncheon meat, roughly chopped
2 tbsp seeded mustard
2 tbsp cream
2 tsp fresh thyme leaves
100g (1 small bag) rocket leaves, washed
METHOD
Boil & Pan fry
Drain potatoes and halve. In a large non stick pan, fry Plumrose premium luncheon meat and potatoes until golden brown. Add mustard and cream to the pan, toss well then add in thyme and rocket leaves. Serve on a large platter.
